I have no real excuse, so I just hope that an amazing #foodporn recipe will help you forgive me for disappearing for 2 months.
(I am a strong believer in the power of peanut butter cups.)
And I missed you, so I promise I am back for good!
Peanut butter cup blondies
Ingredients
113 grams
lightly salted butter, melted
218 grams
light muscovado sugar
1 large egg
1 teaspoon
vanilla
125 grams
flour
10 to 15
peanut butter cups (I use Reese's), cut in halves
Method
1/ Preheat the
oven at 180deg C.
2/ Line the
bottom of a square brownie tin with baking parchment and butter the parchment
and sides of the tin
3/ Mix the
melted butter with the brown sugar – beat (in a free standing mixer or with a
hand electric whisk) until smooth and paler. This will take 3 to 4 minutes.
4/ Beat in the
egg and then the vanilla (not for too long so the mixture doesn't curdle).
Stir gently
the flour in with a spatula.
5/ Mix gently
the peanut butter cup halves in.
6/ Pour the
mixture into the prepared tin.
7/ Bake at
180degC for 20-25 minutes, or until just set in the middle. Cool on rack before
cutting them.
